Don't let the whole grain flours fool you. These brownies taste truly decadent and the whole grains just give them a deeper background flavor. The top has a perfect light crunch to it, with a very chewy interior. The dark chocolate chips provide pockets of gooey, chocolaty goodness. Enjoy!
3/4 cup of good quality cocoa
1/2 cup whole wheat flour
1/2 cup whole grain oat flour
1/4 teaspoon sea salt
2 large chicken eggs
1 1/2 cups sugar
1/2 cup melted unsalted butter
2 teaspoons pure vanilla extract
1 1/2 cups dark chocolate chips
Preheat your toaster oven to 300 degrees F.
Combine the cocoa, whole grain wheat flour and whole grain oat flour, and salt in your food processor fitted with the steel blade. Pulse a few times till well combined. Set aside in a different bowl.
Put the eggs and sugar in the food processor bowl. Pulse a few times then switch to "on" for 30 seconds. With the food processor running, drizzle the butter down the shute. Add the vanilla and process till well combined. Add 1/2 of the dry mixture. Pulse till just combined. Add the rest of the dry and pulse till just combined. Use a spatula to fold in the dark chocolate chips.
Transfer to a greased 8 x 8 baking dish and bake in your toaster oven for 45 minutes to 1 hour. They are ready when a toothpick inserted in the center comes out mostly clean. Enjoy!
