Crackers are usually something even the most dedicated home cook never considers making at home from scratch. Crackers just seem like they would be incredibly difficult and time-consuming to prepare. Not true! Your food processor can do most of the hard work for you. Then you can use your toaster oven to bake them to crispy perfection!
These delicious crackers take healthy whole grains and combine them with heart healthy walnuts and walnut oil. They are perfect by themselves or can be used in place of mass-produced store-bought crackers in just about any culinary application.
1/2 cup of walnuts
1 cup of whole grain wheat flour
1 cup of whole grain oat flour
1/2 teaspoon of sea salt
1 teaspoon of aluminum free baking powder (yes, it really does matter)
1/2 teaspoon of freshly ground black pepper
1/4 cup of walnut oil
3/4 cup of filtered water
Put the walnuts into the work bowl of your favorite food processor and pulse until chopped. Set aside.
Put the whole grain wheat flour, whole grain oat flour, sea salt, black pepper and baking powder into the food processor. Pulse a few times to combine and aerate. Add the walnut oil and pulse until well distributed. Return the chopped walnuts to the work bowl. Add the water then pulse to combine. Turn the food processor to "on" and let run for 30 seconds to knead the dough. Divide the dough into 4 even pieces then cover with a clean, dry kitchen towel. Let the dough rest for 25 minutes.
Heat your toaster oven to 450 degrees F.
Place the cracker dough on a lightly floured board. Roll each piece to between 1/8 to 1/16 inch, depending on the desired thickness of the finished cracker. Cut into the desired shape and size (rectangles or squares are the norm) using a pizza cutter. Do not separate the crackers, just cut the dough. Transfer to a baking sheet lined with parchment paper and bake until golden brown. This should take between 6 to 12 minutes, depending on how thinly you rolled your dough. Allow the crackers to cool completely before breaking into individual crackers. Enjoy!
