I love fried green tomatoes, but I try not to eat fried foods too often for health reasons. This delicious and nutritious version uses nuts and cheese in the breading. And the whole thing cooks up perfectly golden brown in the toaster oven.
So next time an early frost coems around and you still have tons of un-ripened green tomatoes lurking about, try baking them instead of frying them. You won't be sorry!
2 medium un-ripened green tomatoes
1/4 cup of cornmeal
2 tablespoons of ground roasted pecans (you can use a nut grinder, food processor or rolling-pin to grind them)
2 tablespoons of grated Parmesan cheese
1/2 teaspoon of dried garlic powder
1/2 teaspoon of dried onion powder
1/4 teaspoon of sea salt
1/4 teaspoon of freshly ground black pepper
1 teaspoon of milk
2 tablespoons of all-purpose flour
Heat your toaster oven to 450 degrees F.
Slice the green tomatoes about 1/4 of an inch thick and set aside.
Put the flour in a shallow dish along with half of the sea salt. Whisk to combine and aerate. Set aside.
Put the egg and milk in a shallow dish. Beat well. Set aside.
Put the cornmeal, pecans, Parmesan cheese, black pepper, onion, garlic and the rest of the salt into a shallow dish. Mix well. Set aside.
Put the green tomato slices into the flour and flip over to coat thoroughly. Shake off the excess. Move the slice to the egg mixture and coat them well in the eggs. Let the excess egg drip off. Move to the cornmeal mixture and coat each side well with the cornmeal. Be sure to get all over the tomatoes, including the sides.
Place the breaded green tomatoes on a baking dish and into the hot toaster oven. Bake the green tomatoes for 10 minutes then flip each slice over. Bake them for an additional 5 minutes, then let cool slightly before serving. Enjoy!
